The cheese is made starting from goat milk is collected daily at different
farms . After the automatic milking , the milk passes a tank
Free cold where bacteriological attacks remains. A few hours later isothermal trucks are responsible for pick and move to the workplace Tuineje (Fuerteventura ) , where it undergoes pasteurization.


Once it reaches the factory, the milk is introduced in Cuba where , after the addition of specific ingredients for each type of cheese, it is then coagulation. The large curd is subjected to successive cuts , to obtain a grain size between 5 and 15 mm diameter .


Subsequently the excess whey is removed and the resulting paste was the filling
molds , containers that will shape and size to the cheese. Then comes the
pressing, which will serve to finish expelling serum and compacting the ground.


After the release , the process continues with the salty and ends with the matured and conservation
chambers during periods that may last , depending on the variety , from a
hours to more than 6 months. After the cheese has reached the optimum extent of healing is
packaging and labeling for marketing.
